Berry-Misu 

Ingredients

- 500g mixed berries (I use frozen)
- 1.5 cups cranberry juice
- 1 tsp mixed spice
- 250g mascarpone cream
- 600ml thickened cream
- 4 flake bars
- 2 tbsp icing sugar
- splash of vanilla
- packet of Italian sponge finger biscuits
- fresh strawberries (sliced for decoration)

Method

1. Heat 1/2 cup of cranberry juice in the microwave until warm. Add in the mixed spice and give it a good stir. Pour in the rest of the juice and set aside

2. In another bowl, whip together the mascarpone, thickened cream, icing sugar, and a splash of vanilla until light and fluffy. Stir through crushed flake bars.

3. Lay down a layer of sponge finger biscuits at the bottom of your dish. Pour over half of your spiced juice mixture, making sure to soak those biscuits nicely.

4. Add half of your mixed berries over the biscuits, then top with half of the cream mixture.

5. Repeat the layering process - biscuits juice, berries and cream

6. Finally, top it all off with some fresh sliced strawberries. Pop it in the fridge to chill before serving...if you can wait that long!
