Parmesan Crusted Chicken with German Potato Salad

Parmesan Crusted Chicken 

Ingredients

- 2 chicken breast
- 150g shredded parmesan cheese
- 1 egg (whisked)
- salt and pepper
- 2 tbsp olive oil 
- 1 tbsp butter

Method

1. Slice your chicken breast in half so they are nice and thin. Season both sides with a bit of salt and pepper

2. Dip each piece of chicken into your whisked egg, making sure it is fully coated. 

3. Now press each piece into the parmesan cheese, really press down to get as much cheesy goodness as possible on both sides!

4. Heat up the olive oil and butter in a pan over a medium- high heat. Once the pan is nice and hot add your chicken

5. Leave it alone! Resist the urge to touch or move it around - let it cook until the bottom is golden and crispy. This should take about 3 minutes

Tangy German Potato Salad

Who doesn't love a good potato sald? This *German Potato Salad* is warm, tangy and loaded with crispy bacon. Plus, it's super simple to throw together and makes the perfect side for any meal! Lets get cooking!

Ingredients

- 1kg waxy potatoes
- 150g streaky bacon
- 1 diced red onion
- 1/4 cup apple cider vinegar
- 2 tbsp white sugar
- 1/4 cup of neutral taste oil
- bunch of fresh dill

Method

1. Peel and boil your potatoes until they're just soft but still holding their shape

2. While the potatoes are cooking, heat a little oil in a pan and fry your bacon and onion together until they're golden brown and smelling amazing

3. Turn down the heat to low and add the sugar and vinegar, stirring it all together. Then, pour in the rest of the oil to complete your tangy dressing. 

4. Drain your cooked potatoes, slice them up, and toss them into the pan, coating them in that delicious dressing. 

5. Take the pan off the heat and sprinkle in a handful of dill. Give it all one last toss, and you're ready to serve! Perfect warm or at room temp!
