Thai Beef Salad
Ingredients
Steak
- 2 scotch fillet steaks (cooked to your preference and cut into bite sized morsels)
Salad
- 1 punnet cherry tomatoes, sliced
- 1 punnet baby cucumbers, sliced
- 1/2 red onion, thinly sliced
- 300g mixed leaves
- 1 cup min leaves
- 1 cup coriander leaves
- 1 cup peanuts
Dressing
- 2 freshly squeezed limes
- 2 tbsp fish sauce
- 2 tbsp sugar
- 1 crushed garlic clove
- 1 red chilli
Method
1. Cook the steak to your preference, then cut it into bite-sized pieces.
2. In a large salad bowl, mix chilli, garlic, fish sauce, lime juice and sugar until well combined
3. Add the cherry tomatoes, baby cucumbers, red onion, mint leaves, coriander leaves, peanuts and mixed leaves to the bowl
4. Toss the salad ingredients together, then place the steak pieces on top. For an extra kick, sprinkle with red chili slices.
